Gallstones are not caused by eating fat. They are caused by not eating it. Everybody has the story the wrong way round because the pain arrives during a fatty meal. That is the gallbladder finally contracting onto stones that formed while it was sitting still, and the sitting still is the part that made them. The liver makes bile continuously. The gallbladder is the holding tank, and its job is concentration: it draws water out of the bile and holds the concentrate ready for a proper meal. Fat hitting the top of the small intestine releases a hormone called cholecystokinin. Cholecystokinin squeezes the tank. Bile runs down the duct, the fat gets emulsified, and the fat-soluble vitamins go in alongside it. No fat, no hormone, no squeeze. Bile that sits still keeps concentrating. Cholesterol comes out of solution. Crystals form, crystals become sludge, sludge becomes stones. Which is why two of the recognised risk factors are a very low fat diet and rapid weight loss. Both do the same thing. They leave a full tank untouched for weeks. And the advice given to a woman with early gallbladder trouble is to cut the fat back further. So the bag comes out, tens of thousands of times a year in this country, and afterwards the bile drips into the gut around the clock with nowhere to be stored.Gallstones are not caused by eating fat. Nothing in the human body empties that organ except dietary fat. That is the entire signal, and the treatment is to remove it.
