1930s, Enrichment of white flour with niacin began.  White flour grew in popularity but had lost a lot of its nutrients in processing.  Who decided it was time to replenish the bread with vitamins?  From Bakerpedia

Flour enrichment can provide an important source of iron in the diet. In the U.S., flour enrichment was established in the 1930’s as the popularity of white flour increased. Health concerns about the rise in cases of diseases such as beriberi and pellagra led to an examination of white flour. Both beriberi and pellagra are caused by vitamin and mineral deficiencies. The addition of B vitamins and iron to white flour eliminated the diseases beriberi and pellagra. 3

Folate wasn't added to white flour until the 1990s.

Did you know, you might say, that in 1935, professor of biochemistry Claus Jungeblut at Columbia University showed that vitamin C destroys polioviruses? Then he went on to show in a series of experiments – all in the late 1930s – that vitamin C reduced the symptoms of polio, prevented polio, and even giardia. Now that is a [inaudible 05:14] statement.

In his day, Jungeblut was justly regarded as an important player in polio research. While recent revisionist history of the fight against polio has generally downplayed his contribution to the crusade, it has totally sidestepped what was arguably his most important discovery: that ascorbate is prevention and cure for polio. Amazingly, Jungeblut first published this idea in 1935. (5) His research on ascorbate was sweeping and profound, extending well beyond the topic of polio. In 1935, he also had shown that vitamin C inactivated diphtheria toxin. (6) By 1937, Jungeblut demonstrated that ascorbate inactivated tetanus toxin. (7) John T. A. Ely, PhD, writes: "In the 1930's, the remarkable Claus W. Jungeblut, MD . . . first reported that ascorbic acid in concentrations, attainable in humans by a high intake, could inactivate and or protect against numerous viral and bacterial pathogens and their toxins. These include the polio, hepatitis and herpes viruses. . . One of (Jungeblut's) earliest research findings was ascorbic acid's ability to neutralize and render harmless many bacterial toxins, such as tetanus, diphtheria, and staph toxins." (8) 

Just thought this was a fascinating read.  And you can see even back in the 1930s how vitamin C was discredited by a vaccine proponent. 

Sadly, adds Klenner, "Sabin's negative report on the value of ascorbic acid on the poliomyelitis virus stopped Jungeblut's work." (15) Fortunately, it did not stop Klenner, who piloted megascorbate therapy for his patients during the 1948 polio epidemic. "For patients treated in the home," writes Klenner, "the dose schedule was 2,000 mg by needle every six hours, supplemented by 1,000 to 2,000 mg every two hours by mouth." That is a total of 8,000 mg/day intramuscularly, plus, allowing for sleep, oral doses in the range of an additional 16,000 to 32,000 mg. This yields a total between 20,000 and 40,000 mg of vitamin C per day.

It was certainly not for lack of research funds that nothing happened. John M. Russell, in the 1960 book TheCrisis in American Medicine, edited by Marion K. Sanders, described the glut and waste of money for medical research in the 1950s. Russell points out that the public clamor for a cure for polio was so great that in 1954 Congress appropriated $1,000,000 specifically earmarked for polio research. It turned out that there was so much polio money floating around that the recipient of this largess, the U.S. Public Health 102 The Origin of the 42-Year Stonewall of Vitamin C Service, classified such unlikely diseases as hepatitis as "poliolike" so that none of this money would have to be returned to the U.S. taxpayer.

1958,  Melatonin discovered
Melatonin or 5 methoxy-N-acetyltryptamine (Fig. 1) was discovered and isolated from bovine pineal in 1958 by Aaron Lerner.  Melatonin is the main hormone secreted by the pineal gland. Extrapineal sources of melatonin were reported in the retina, bone marrow cells, platelets, skin, lymphocytes, Harderian gland, cerebellum, and especially in the gastrointestinal tract of vertebrate species [2-9]. Indeed, melatonin is present but can also be synthesized in the enterochromaffin cells; the release of gastrointestinal melatonin into the circulation seems to follow the periodicity of food intake, particularly tryptophan intake [210]. It is noteworthy that the concentration of melatonin in the gastrointestinal tract surpasses blood levels by 10-100 times and there is at least 400 times more melatonin in the gastrointestinal tract than in the pineal gland [2].
