It was a skill, handed from mother to daughter over the sink, and it ran deeper than checking for bad. - Beef was meant to be dark, having hung at the butcher's for 3 or 4 weeks - A pheasant hung by the neck until it was properly high - Mutton was kept until it had flavour - Milk on the turn was not thrown out, it was baked with - Cheese with a bloom on it had the bloom cut off Meat that has been aged is more tender and tastes of more. Every butcher and every cook understood that time, handled properly, improves an animal. In 1980 date marks became law. The printed number was only ever the manufacturer's cautious guess, but within a generation it had replaced the judgement entirely. Nobody was taught to sniff, because the packet would tell you. So now a steak that is at its very best goes in the bin because it is Thursday. Bright red beef, barely a week from the abattoir, is preferred because it looks fresh. British households throw away millions of tonnes of food a year, much of it unopened.

The China Study data: Plant protein worse than animal protein.

She went and performed and exhaustive analysis of the raw data from The China Study.  And what she actually found was fascinating.  So remember that this book claimed that animal protein increases risk of dying from cancer.  The data actually showed that the death from all cancers was about four times as strongly associated with plant protein than it was for animal protein.  Now special attention also comes in for wheat protein.  So when you actually look at the data wheat protein is a far stronger associate of cardiovascular disease than animal proteins.  So these directly contradict the central tenant of this book . . .
So gram for gram, the soy protein has at least a thousand times the estrogenic activity of the hormone treated beef.  If you're worried about hormones in beef you should be more worried about soy.

1:08.  Not really.  So let's get some background here hormone growth promotions is legal in the United States and in Australia although not in Tasmania and basically what they do they get these little implants that they implant into the animals ear and that slowly eludes these hormones.
