Humans evolved away from apes by reducing the size of the large intestine by 77%. Which drastically reduced our ability to extract nutrition from plant foods. While the small intestine became 64% longer. Improving protein and fat digestion. We used to be adapted to eat fiber. But that was four million years ago.

We've since replaced that with the adaption to eat meat, and the ability to be human.
