SAMA HOOLE: It hands you the fruit on purpose. That is how the seed gets a lift somewhere else. The seed is the only part it cannot afford to lose. So the seed is the part it armed. Cooking does not disarm it. Cooking makes it survivable.


The base of the food pyramid is seeds, and a seed is the one part of a plant built to kill whatever tries to eat it. Bread is a seed. Rice is a seed. Porridge is a seed. Corn is a seed. Soy is a seed. A kidney bean is a seed. A lentil is a seed. An almond is a seed. Quinoa is a seed. A plant loses leaves all summer and does not care. It grows more. It hands you the fruit on purpose. That is how the seed gets a lift somewhere else. The seed is the only part it cannot afford to lose. So the seed is the part it armed. Cooking does not disarm it. Cooking makes it survivable. Phytic acid walks straight through the pot and takes your zinc and iron with it. Trypsin inhibitors are still there in commercially heat-treated soy, still blocking the enzyme that digests protein. Gossypol comes through industrial processing intact, which is why cottonseed meal is fed to cattle and never to pigs. Lectins need a hard rolling boil, and a slow cooker at eighty degrees raises the toxicity instead of lowering it. The grass pea walked through every famine kitchen in India and paralysed people at the table. Then you bake it or fry it and produce acrylamide, which the seed did not even have to supply. Six to eleven servings a day of a food that has to be defused first. We called that the healthy foundation and then wondered where the deficiencies came from.
