The moisture. - 40g parmesan. The backbone. - 200g streaky bacon, latticed over the top. - Salt. The bacon does the basting as it renders, which is the job the ketchup was pretending to do. 180C fan, fifty to sixty minutes, pull it at 71C, rest it ten before a knife goes near it. Four servings, 820 calories a slice, and none of the extra inflammation. Your mother did that arithmetic because she had to.
