SAMA HOOLE: Their hearts physically shrank by 17%. Metabolic rate collapsed by around forty. They could not keep warm, layering clothes indoors while their lips and nails went blue. Hair came out. Ankles and faces swelled while the rest of them wasted. Some managed one bowel movement a week.

Thirty-six healthy young men were deliberately starved in a Minnesota laboratory for six months, and I want you to hold off on the number until the end, because you will not believe how many calories it took. The brochure went to the conscientious objector camps in 1944. Will you starve so that others may be fed. Four hundred said yes. Thirty-six were chosen as the most robust of them, in body and mind. The door shut on 19 November 1944 under Ancel Keys and stayed shut for thirteen months. Twelve weeks of baseline first. Healthy, sociable, energetic men. Then Keys began. The bodies went first. A quarter of their weight gone. Fat down seventy per cent, muscle down forty. Resting pulse from fifty-five to thirty-five. Their hearts physically shrank by seventeen per cent. Metabolic rate collapsed by around forty. They could not keep warm, layering clothes indoors while their lips and nails went blue. Hair came out. Ankles and faces swelled while the rest of them wasted. Some managed one bowel movement a week. Then the minds went, and that is what the study is remembered for. They read cookery books for pleasure. Collected recipes they had no means of cooking. Studied menus like scripture. Cut one small portion into smaller and smaller pieces to make it last, watered it down, hid it. Hoarded kitchen implements they could not use. Sex stopped mattering. So did their friends, their politics and their faith, which in a room full of religious objectors is not a small thing. They looked at other people and saw fat where there was none. Sam Legg, subject twenty, amputated three of his own fingers. Now. What would you guess reduces the most screened, most resilient young men in America to that? Six hundred calories? Eight? They were eating 1,621 calories a day, falling to 1,514. Two meals, no dinner. Potatoes, turnips, cabbage, macaroni, dark bread. Fifty-one grams of protein, 286 of carbohydrate, thirty of fat. Low fat, low protein, mostly starch, with a twenty-two mile walk each week. That is not a famine ration. That is a slimming club target. That is the number in the app. That is the recommended plate, at a deficit, and it is what a great many women are eating this afternoon while being told they are simply not trying hard enough. And it does not stop when the diet stops. Two thousand a day was not enough to bring those men back. Keys put recovery at four thousand a day for months. Turned loose, they ate up to eleven thousand, wept, binged, vomited and reported they were still hungry. The weight came back as fat, on the abdomen. Some never ate normally again. Every one of those responses is now filed under personal failure. Keys published it in 1950. Nobody has contradicted it since.

CHRIS MASTERJOHN: Fred Kummerow outlived Ancel Keys by two years (102).

A critic of Ancel Keys, he liked to tell the story of the time he had dinner with Keys. Keys ordered a steak. Kummerow said “I thought you don’t eat saturated fat?” Keys reportedly said “Oh that’s not for me, that’s for the people.” --Chris Masterjohn

Fred Kummerow outlived Ancel Keys by two years (102). A critic of Ancel Keys, he liked to tell the story of the time he had dinner with Keys. Keys ordered a steak. Kummerow said “I thought you don’t eat saturated fat?” Keys reportedly said “Oh that’s not for me, that’s for the people.” A lifelong critic of partially hydrogenated oils, he single-handedly got them out of the US food supply in his late 90s by catching FDA on a legal technicality (they failed to respond to his question in six months) and threatened to sue them for it unless they opened the path to rejecting their GRAS status, which happened quickly. I rented a studio apartment in his basement during this time and had lunch with him every Saturday, so I heard the stories about what was happening in the courts on a regular basis. I never estimated his saturated fat intake but he ate eggs and full fat dairy but relatively small amounts of meat, though he still ate meat regularly. One of his quirkiest nutrition habits was to measure the minerals he lost in his urine and adjust his diet and supplements to replace them. Evidently Keys and his enemies are all capable of living long lives.

SAMA HOOLE: "We're running a population-wide starvation experiment and calling it health advice," thanks to the founder of the Mediterranean Diet.

1944: Ancel Keys runs Minnesota Starvation Experiment. He puts 36 men on semi-starvation diet for 6 months: 1,570 calories. High-carb, low-fat, low-protein. Results within weeks: - Food obsession - Depression - Irritability - Loss of libido - Social withdrawal - One subject cuts off three fingers in frustration Keys documents this meticulously. Publishes 1,400-page book: "The Biology of Human Starvation." His conclusion: Semi-starvation causes severe physical and psychological damage. Now here's the interesting part: Keys' starvation diet: 1,570 calories. High-carb. Low-fat. Modern "healthy weight loss diet": 1,500-1,800 calories. High-carb. Low-fat. They're nearly identical. Keys documented this causes food obsession, depression, metabolic adaptation, intense hunger, psychological distress. Then spent the rest of his career promoting low-fat diets. 1960s-present: Dietary guidelines recommend calorie restriction, low-fat, high-carb. This is Keys' starvation diet. Rebranded as "healthy eating." Results, 1960-2025: - Obesity up 300% - Depression epidemic - Food obsession normalised - Eating disorders skyrocketing These are the exact symptoms Keys documented in his starvation experiment.
