Testing shows the overwhelming majority of celery samples contain pesticide residues with some samples contaminated with over a dozen different pesticides. Common contaminants include potential carcinogens, neurotoxins, insecticides, and endocrine disruptors. Celery's high water content makes it absorb pesticides readily. Washing doesn't remove them because they're systemic within the plant tissue. Celery also contains psoralens which are phototoxic compounds that cause skin reactions, moderate oxalates that are additive with other foods, nitrates sometimes at concerning levels, and compounds that can cause allergic reactions. The psoralens make skin hypersensitive to UV light. Celery handlers develop phytophotodermatitis which is blistering rashes from sun exposure after touching celery. Nutritionally celery is water with negligible protein and minimal nutrients contaminated with pesticide cocktails. Your healthy snack is delivering endocrine disruptors and neurotoxins while providing essentially zero nutrition. Maybe just drink water and get the same hydration without the pesticides.
