SAMA HOOLE: No enzyme that opens cellulose. No plant alive carries the B12 we die without. We grew a brain instead, bought with meat, the gut shrinking back to pay for it.

The cow grew four stomachs to eat grass, and chews the cud eight hours a day to break it down. The horse grew a fermentation vat the size of a bin bag and grazes sixteen hours out of twenty-four. The rabbit eats its own droppings, because one pass through the gut cannot crack a plant open. The gorilla runs a colon so big it drags half its energy out of leaves it otherwise could not touch. The koala grew a two-metre gut and a poison-proof liver, then sleeps twenty hours a day because the leaves still barely pay. Every plant-eater is a specialist machine that gives up half its waking life to the job. Now look at us. A short, plain gut. No rumen, no vat, just a shrivelled pouch we cut out and never miss. No enzyme that opens cellulose. No plant alive carries the B12 we die without. We grew a brain instead, bought with meat, the gut shrinking back to pay for it.

The animal is the one built to eat plants. We are built to eat the animal.
