"Avocado oil - the healthy high-smoke-point alternative!" Reality check: 82% of avocado oils tested were either rancid, oxidised, or cut with cheaper seed oils before bottling. You're not cooking with avocado oil. You're cooking with canola oil that someone added avocado flavouring to. The smoke point is irrelevant when the oil was already rancid at the factory. Want a high smoke point? Use beef tallow. It's stable, doesn't oxidise, actually tastes good, and costs a fraction of fake avocado oil.

But tallow doesn't sound trendy, so nobody's buying it.
