Thirty-six healthy young men were deliberately starved in a Minnesota laboratory for six months, and I want you to hold off on the number until the end, because you will not believe how many calories it took. The brochure went to the conscientious objector camps in 1944. Will you starve so that others may be fed. Four hundred said yes. Thirty-six were chosen as the most robust of them, in body and mind. The door shut on 19 November 1944 under Ancel Keys and stayed shut for thirteen months. Twelve weeks of baseline first. Healthy, sociable, energetic men. Then Keys began. The bodies went first. A quarter of their weight gone. Fat down seventy per cent, muscle down forty. Resting pulse from fifty-five to thirty-five. Their hearts physically shrank by seventeen per cent. They read cookery books for pleasure. Collected recipes they had no means of cooking. Studied menus like scripture. Cut one small portion into smaller and smaller pieces to make it last, watered it down, hid it. Hoarded kitchen implements they could not use. Sex stopped mattering. So did their friends, their politics and their faith, which in a room full of religious objectors is not a small thing. They looked at other people and saw fat where there was none. Sam Legg, subject twenty, amputated three of his own fingers. Now. What would you guess reduces the most screened, most resilient young men in America to that? Six hundred calories? Eight? They were eating 1,621 calories a day, falling to 1,514. Two meals, no dinner. Potatoes, turnips, cabbage, macaroni, dark bread. Fifty-one grams of protein, 286 of carbohydrate, thirty of fat. Low fat, low protein, mostly starch, with a twenty-two mile walk each week. That is not a famine ration. That is a slimming club target. That is the number in the app. That is the recommended plate, at a deficit, and it is what a great many women are eating this afternoon while being told they are simply not trying hard enough. And it does not stop when the diet stops. Two thousand a day was not enough to bring those men back. Keys put recovery at four thousand a day for months. Turned loose, they ate up to eleven thousand, wept, binged, vomited and reported they were still hungry. The weight came back as fat, on the abdomen. Some never ate normally again. Every one of those responses is now filed under personal failure. Keys published it in 1950. Nobody has contradicted it since.
