American seed oil consumption increases 1000% between 1960-2000. What happens: Obesity triples. Diabetes explodes. Heart disease continues rising despite "heart healthy" oils. What seed oils actually do: - Oxidise easily - High omega-6 promotes inflammation - Disrupt cell membranes - Interfere with mitochondria Your great-grandparents cooked with lard, tallow, butter. You cook with canola, soybean, sunflower oils. One group didn't have obesity epidemic. One does. The difference isn't genetics. It's subsidies. Government made seed oils artificially cheap. Population got sick.

Now you pay taxes to subsidize the oils that make you sick, then pay for medications to treat the diseases they cause.
